Evergreen Pesto
Here's what you'll need:
ingredients:
2 lb Fresh basil
4 cloves of Pealed Garlic
3 cup Olive oil
To taste Kosher salt
To taste Black pepper
2 cups Shredded Parmesan
serves 6
Instructions:
Blanch your basil on boiling water for one minute
Remove the Basil leave out of the boiling water
Shield your Blanched basil leave on the ice water bath
remove your basil out of the ice water bath
squeeze the extra water from the basil leaves
slice the basil leaves with a chef knife
place your basil leaves, peeled garlic, kosher salt, Black pepper, and half of your olive oil in your blender
blend it for 30 seconds
Add your shredded Parmesan
Turn your blender on and add the remaining olive oil
Put your pesto in a sealed container and place it into a fridge.
Because you’re blanching the basil leaves you will be able to keep this pesto super green for five day in your fridge.
Enjoy this pesto on pasta, use as a dipping sauce for cut vegetables, or add as a flavorful topping to a grilled chicken breast.
